It’s waffle time! growing up, my mom would always make pancakes or waffles at least once a week. sundays, became the day I looked forward to the most and I’ve carried it on into adulthood, because tbh waffles make me feel like a kid again!

ever since i stopped consuming gluten, i’ve had to learn how to make my favorite childhood dishes in a whole new way. the thing i discovered is that i can still pretty much make everything i used to with grain-free alternative flours. cassava is one of those flours. it provides the same fluffy texture in baked goods. If you don’t believe me give these a try!

Collagen Cassava Mini Waffles

Making healthy waffles a thing! This recipe was adapted from Dr. Gundry's original recipe and it's one of my favorites. It's made with gut-friendly ingredients so there's no need to feel guilty about eating them.

Ingredients

Instructions

  1. Heat up your waffle maker. I love my tiny waffle iron!
  2. Place all ingredients in a blender and mix until well combined and smooth.
  3. To make in a bowl, simply whisk all your wet ingredients + the collagen together then add the dry ingredients (cassava, salt, baking soda)
  4. Ladle about a 1/4c of batter into your waffle maker and take out once they are golden brown.
  5. Make them sweet or savory. Sometimes I do both ;)
