As kids, we were always told to eat our broccoli but were probably not the biggest fan. You might change your mind after making this soup.

Some consider broccoli to be a superfood, part of the cruciferous family, this vegetable is low in calories, but contains a wealth of nutrients and antioxidants that support many aspects of human health. It’s high in fiber and rich in vitamins, minerals, and antioxidants, which help eliminate free-radicals. The other ingredients in this soup provide vitamin C (parsley) and anti-inflammatory benefits (turmeric).

Nourishing Broccoli Soup

My favorite go-to soup for any season. Quick, simple, and nutritious.

Ingredients:

  • 1 head of broccoli, cut into florets
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 yellow onion, chopped
  • 3 cloves of garlic, chopped
  • 1 bunch of parsley
  • 1 tbsp ghee or oil
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tsp Italian herbs
  • 1 tsp turmeric
  • 2 bay leaves
  • 32 oz of bone broth or veggie stock

Instructions:

InstantPot
  1. Turn on sauté function + pour in oil.
  2. Sauté onions for 2min then add carrots + celery + garlic, sautee for 3 min.
  3. Add spices + seasoning, mix to combine.
  4. Add broccoli + broth
  5. Close InstantPot and set timer for 5min on high pressure.
  6. Once the timer goes off, release pressure.
  7. Place parsley into a blender and pour in soup contents. Blend until combined. Season to taste.
Stove Top
  1. Heat a large pot on medium heat  + pour in oil.
  2. Sauté onions for 2min then add carrots + celery + garlic, sautee for 3 min.
  3. Add spices + seasoning, mix to combine.
  4. Add broccoli + broth
  5. Bring to a boil and simmer for 10-15min or until broccoli is tender
  6. Place parsley into a blender and pour in soup contents. Blend until combined. Season to taste.
