Chinese 5 Spice Banana Nut Granola
This lectin-free granola is a game changer!
The most common ingredients found in a Chinese 5 spice mix are star anise, fennel seeds, Szechuan peppercorns, cloves, and cinnamon. It is said to be based on the five elements - fire, water, wood, earth, and metal. According to traditional Chinese medicine, the five elements are manifested in different parts of the body. When there are imbalances in these elements, illness can result.
I used to eat oats, granola, and muesli almost every other day before changing up my diet and going on the plant-paradox protocol. After eliminating all gluten-containing grains, my morning felt a little sad. With this version, Iām still able to have my fix without the side effects that come from eating most store-bought cereals.
Chinese 5 Spice Banana Nut Granola
Ingredients:
- 2c unsweetened green banana chips
- 1c walnuts
- 1c pecans
- 1c sliced almonds
- 1c coconut chips
- 1tbsp Chinese 5 spice
- 1tbsp coconut oil
- 1tbsp honey
- 1tbsp vanilla extract
Instructions:
- Heat oven to 325F
- Place all dry ingredients in a large bowl + mix together
- In a small bowl combine wet ingredients
- Pour into dry ingredients and mix
- Spread granola onto baking sheet
- Bake for 10-15min. Tossing half way through
- Let cool and store in air tight container
- Serve with coconut yogurt and seasonal fruit
